Lemon squares

| recipes | | Comments (1)

This recipe is really good at sea level, but isn't quite right at high altitude. I haven't had time to play around with it to figure out how to fix it though.

Preheat oven to 350.

Crust:
1/2 c butter (softened)
1 1/3 c flour
1/4 c sugar

Combine all ingredients and mix well. Press into bottom of square pan. Bake at 350 until edges are brown.

Filling:
2 eggs
3/4 c sugar
2 T flour
1/4 t baking powder
3 T lemon juice (I think I used to add more)

Mix well. Pour over crust and return to oven. Back 18-20 mins more or until set. Sprinkle with 10x sugar and cool.
