Chicken Tortilla Soup
From the Pampered Chef catalog...
(I'm cleaning off my desk and didn't want to lose this recipe.)
4 (6") corn tortillas
1/2 cup chopped onion
3 boneless skinless chicken breast halves (about 12 oz)
1 garlic clove, pressed
1/4 teasp chili powder
1/3 teasp ground cumin
2 cans (14 1/2 oz each) chicken broth
1 can (14 1/2 oz) diced tomatoes, undrained
1 can (4 oz) chopped green chilies, undrained
4 teasp snipped fresh cilantro
1/2 cup (2 oz) shredded cheddar cheese
4 thick slices fresh lime (optional)
Preheat oven to 400 degrees F. Cut tortillas into 1/2" strips. Bake 7-8 minutes or until crisp.
Meanwhile, chop onion. Cut chicken into 1/2" pieces. Cook chicken in large pot. Approximately 3 minutes. Add onion, garlic, chili powder and cumin. Cook and stir 2 mins. Stir in broth, tomatoes and chilies. Bring to a boil. Reduce heat and simmer 10 mins.
Snip cilantro using kitchen shears. Divide tortilla strips among 4 bowls. Ladle soup over tortillas. Add grated cheese. Sprinkle with cilantro. Garnish each bowl with lime slice.





that actually looks like a good recipe for tortilla soup...and i'm pretty picky about soup recipes.
mmm...now, i'm hungry.
This was one fo the best recipies that I tried from Pampered chef. My best friend and I made it and she is a very picky eater and she really liked it a lot!
this is the BEST tortilla soup recipe. Don't be skeptical! I lost my copy and decided to look online to see if it was posted any where and am so relieved to have found it, especially since soup season is upon us!
