Molasses cookies
These are the best cookies ever. EVER! The recipe is from my stepfather's side of the family (Aunt Livinia?). My brother had it and I finally got a copy of it. ![]()
I couldn't remember if they were molasses cookies or ginger cookies but I knew they were associated with Vermont (where my stepfather's family lived) in my mind and were wonderful. I got to eat a few but wasn't allowed to take any with me so guess what I'm going to make this week? ![]()
Molasses cookies
5 cups flour
2 T ginger (yes, that's right)
5 t baking soda
2 t cinnamon
1.25 t salt
1.5 c oil
2.5 c sugar
3 eggs
2/3 c molasses
Preheat oven to 325. Place 1" balls approximately 2" apart on a greased cookie sheet. Bake for about 10 minutes.
Makes 6-7 dozen cookies.

Oh, those sound wonderful!! I may have to try those.
What kind of oil do you use? Do you think butter would be okay as a substitute? I'll give these a try this weekend.
Thanks Lisa!
Just plain ol' vegetable oil. I don't think butter would do the trick because there is so much flour. in there.
